Cut gutted fish along the middle of the fillet, season with olive oil and sea salt (fish gut should be salted as well) and grill. When roasted, flavour with freshly ground pepper, olive oil and optionally finely chopped garlic and seasoning herbs.

Note:

Turn the fish only once, halfway roasted. That way the skin will not stick to the grill.
